Why use steel?
As a traditional French cuisine favorites, steel frying pans have been used for generations.
There’s no better metal for searing, grilling and browning thanks to a process called the
Maillard reaction: a reaction where surface sugars caramelize, while leaving the center soft.
It is natural, uncoated, wear-free and improves over time. Steel pan that can be passed down
from generation to generation. La Lyonnaise is particularly light and easy to handle.
The shape makes it easier to stir or toss the pan’s contents. The French-style handle is comfy
to hold and will keep your hand far enough away from the heat source.
Why is it blue?
At the origin of de Buyer going international, large quantities of this flagship product was
exported by boat, this range of steel pans is blue due to a thermal treatment that naturally
protects them from oxidation.
