Gingerbread can trace its roots back to the ancient Greeks, who used it for ceremonial purposes. As exotic spices made their way back from the Middle East in the 11th century, European cooks developed recipes for large biscuits that were formed by pressing dough into elaborately carved molds and painted with edible gold. The first gingerbread man is credited to Queen Elizabeth I who had cookie caricatures made to resemble visiting dignitaries.

The more modern shape of “The Gingerbread Man” was inspired by a children’s story published by St. Nicholas Magazine in 1875. It featured an illustration of the now-familiar gingerbread cookie running away and calling out, “You can’t catch me, I’m the Gingerbread Man!”
