The Performer 7" Hollow Edge Rotoku, a WÜSTHOF innovation, is the evolution of the classic Santoku. The wide blade offers perfect control and also serves as a practical tool: Use it to scoop and transfer ingredients from the cutting board to the skillet or serving bowl.

 

The curved edge pairs the smooth, rocking cuts essential to a European-style chef’s knife with the unparalleled precision of an Asian-style chef’s knife. The hollows along the blade’s edge allow small air pockets to form, minimizing sticking and maximizing efficiency. This knife extends the original “three virtues” of the traditional Santoku (named for the myriad ways it’s used for meat, fish, and vegetables) by three more core functions: chopping, serving, and transporting.
